Scone Selection

Rosemary Parmesan Scones

Start the day with a nice hot Rosemary Parmesan Scone. Add a little slice of Parmesan Cheese to the plate and serve. I cannot get enough of the Rosemary I am growing in my garden and I am totally in love with this scone!


Sandwich Selection

Cucumber Olive Sandwich with Heat

Since we are sitting by the Fire Pit and the temps are cool let’s heat up our food. I wanted to use up the wonderful hot peppers from my garden so this is what I made.

INGREDIENTS:

 4 slices white bread

4 slices whole wheat bread

16 oz. cream cheese softened

4 large green olives stuffed with pimentos, sliced thin

3 jalapeños cut thin (leave in the seeds for the heat)

DIRECTIONS:

Spread the cream cheese on each slice of white bread. Press into cream cheese the slices from one olive and ¼ of the slices of jalapeños. Cover with a slice of wheat bread. Remove crust and cut diagonally. These are ready to serve.


Mini Hamburgers

I have a mini hamburger maker machine and I love it for Afternoon Tea Parties. If you do not have one then just make the hamburgers tiny and cook in a frying pan with a little water.

INGREDIENTS:

½ pound ground beef

1 package onion soup mix

1 clove of garlic cut in small pieces

4 Slider buns or dinner rolls

4 pickle slices

4 teaspoons of ketchup

DIRECTIONS:

Mix the beef, soup mix and garlic together. Form 4 patties.  Cook on mini hamburger machine. Once done place on the bottom side of bun. Put one teaspoon of ketchup on it and top with a pickle slice. Put the top half of the bun over that and it is ready to serve.

Fire Pit Sausage Sandwich

Since my outdoor fire pit is actually called a chiminea, it has a place at the top where I place aluminum foil and cook breakfast sausages. There are other ways to cook them on an outside fire pit and is with a hamburger grill basket. This sandwich can be made during the Afternoon Tea Party and it makes it all the more exciting and tasty.

INGREDIENTS:

8 Breakfast sausage links

2 Potato Hotdog Rolls cut in half

4 Teaspoons of Horseradish Sauce

DIRECTIONS:

Heat the sausages on the Fire Pit

While the sausages are heating, cut the hotdog rolls in half and spread 1 teaspoon of horseradish sauce on each roll

Place 2 sausages on each roll and enjoy!

 


Drinks

 Water with Cucumber

Since we are serving hot and spicy food we want to make sure that our guests have some cold water to cool off their mouths. In each glass place some ice and water. Cut a thin slice of cucumber. Cut a slit in the cucumber and place of the edge of the glass so everytime your guest goes to drink they get the wonderful cucumber smell.

 

Mint Tea

Clearing out the garden includes cutting, washing and drying the mint. Once it is dry I use it all year for everything but today we will make tea for our guests. My measurements are based upon the fact that y dried mint is not ground.

INGREDIENTS:

8 cups of water boiled

12 teaspoons of dried mint

Sugar for sweetening

DIRECTIONS:

Once the water is boiled, remove from heat. Place the dried mint in the pot with the boiled water, cover and let steep for 10 minutes. Serve hot. Provide sugar or other sweetener for your guests to add to their individual cup.
